- Servings: 8-10
Ingredients (11)
- 1 cup softened margarine
- 1 2/3 cups packed light brown sugar
- 1 teaspoon apple pie spice or cinnamon
- 1 teaspoon vanilla extract
- 2 medium peeled, cored, and thinly sliced apples
- Juice from 1/2 medium lemon
- 2 to 3 tablespoons finely chopped walnuts (optional)
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking powder
- 2 large eggs
- 1/4 cup vanilla soy milk
Instructions
- Preheat oven to 325°F and position a rack in the center. Grease an 8-by-8-inch square baking dish with non-stick cooking spray.
- In a saucepan over medium heat, melt 1/2 cup of the margarine. After it foams, toss in 2/3 cup of the brown sugar, 1/2 teaspoon apple pie spice, and vanilla extract. Stir this mixture over medium heat until the sauce is smooth and a deep amber color. Pour this caramel sauce evenly across the bottom of the baking dish.
- Arrange the apple slices in tight rows over the caramel sauce, and sprinkle lemon juice on top of the apples. If you like, sprinkle walnuts over the apples.
- In a large bowl, mix flour, baking powder, and remaining 1/2 teaspoon apple pie spice. Add the remaining 1 cup of brown sugar, remaining 1/2 cup margarine, and eggs. Beat on medium speed until a thick batter forms. Fold in soy milk, making sure everything is evenly combined.
- Pour the batter over the apples and spread it out evenly. Bake for about 45 to 55 minutes, or until a toothpick inserted in the cake layer comes out clean. Flip the cake onto a serving platter and serve it warm or at room temperature.
Enjoy your home-baked goodness! And remember, it's always more fun when you bake with a friend!
