  • 1 head iceberg lettuce
  • ½ cup mayonnaise
  • 3 fresh jalapeno peppers
  • 1 cup white bread cubes without crusts

Instructions

  1. Bye-bye jalapeno stems! Hold the peppers over a stove burner and rotate until roasted, about a minute. It's optional but adds a delightful smoky flavor.
  2. In a dramatic fashion, slam your lettuce head down on the counter, stem side down. Pull on the stem to remove the heart and discard it. Rip the head apart roughly—don't be too gentle!
  3. Combine lettuce and one or two roasted jalapenos in a blender or food processor. Blend on low speed until jalapenos are nicely ground up. Add the mayonnaise, and pulse until incorporated. Gradually blend in bread cubes until you achieve a thick but pourable consistency. If it thickens too much, add more mayonnaise. Add more peppers if desired to taste.
