- 1 package (14 oz) wide rice noodles
- 1/4 cup oyster sauce
- 1/4 cup fish sauce
- 1/4 cup fresh lime juice (from about 2 limes)
- 3 tablespoons vegetable oil
- 2 shallots, peeled and thinly sliced
- 3 garlic cloves, peeled and finely chopped
- 1 lb ground chicken
- 2 red or green bell peppers, thinly sliced
- 3 eggs, beaten
- 2 jalapeño peppers, thinly sliced
- 1 cup Thai basil leaves
Instructions
- Drench the rice noodles in a large bowl with boiling water. Let soak for around 15 minutes, until elastic but not mushy. Drain and set aside while preparing the rest of the dish. In the meantime, combine the oyster sauce, fish sauce, and lime juice in a medium nonreactive bowl and set aside.
- Warm the oil in a large (12-inch) pan over medium-high heat. Add the shallots and garlic, cook for 2 minutes until softened, but not browned. Next, toss in the ground chicken, breaking it into small pieces. Cook until chicken is almost done, about 3 minutes. Now, add the bell peppers and stir-fry for about 5 minutes until softened.
- Shift the chicken mixture to one side of the pan, creating space for the eggs in the center. Scramble the eggs until set, about 1 minute. Now, move the eggs to the side, add the sauce mixture, and boil the sauce. Once boiling, incorporate the drained noodles and mix thoroughly. Remove from heat, add the jalapeños and basil, and mix once more. Serve this delectable dish immediately.
