Ingredients (8)- 5 cups of sweet white corn kernels (obtained from about 7 to 8 medium cobs)- 2 tablespoons of zesty lemon juice- 1 1/2 teaspoons of kosher salt- 1/4 teaspoon of freshly ground black pepper- 3 tablespoons of aromatic extra-virgin olive oil- 1 10-ounce container of cherry or pear tomatoes, neatly halved- 1/2 cup of finely chopped red onion- 1/4 cup of fragrant fresh basil, thinly sliced

How-to:1. Prepare an ice water bath by filling a large bowl halfway with ice and water; set aside. Bring a large pot of salted water to a rolling boil over high heat. Toss in the corn kernels and cook until tender, approximately 4 minutes. Drain and chill in the ice water bath until cool, about 4 minutes.2. Combine the lemon juice, salt, and pepper in a large, nonreactive bowl. While continuously whisking, drizzle in the oil until it's fully incorporated. Add the remaining ingredients and the cooled corn and mix until completely coated. Serve and enjoy!
