- 4 large eggs
- 4 scallions, thinly sliced

- Coat a large bowl with oil, transfer dough, cover, and let rise for 1 hour, or refrigerate for up to 2 days.
- Preheat oven to 450°F, arrange racks, and line baking sheets.
- Cook pancetta on hot baking sheets until crispy (about 15 minutes). Drain, cool, and toss in a bowl.
