Ingredients (20 Tasty Treats)
- 2 TBSP extra-virgin olive oil
- 1/2 cup finely sliced white leeks
- 1/4 cup finely chopped celery with the best inner stalks
- 1 cup diced fresh tomatoes
- 2 minced garlic cloves
- 1/2 TBSP fresh thyme leaves
- 1/2 cup dry white wine
- 1 tsp Old Bay Seasoning
- 1 cup tomato juice
- 3 cups fish, shrimp, or lobster stock (clam juice in a pinch)
- 9 lightly cooked golf-ball new potatoes
- 3 ears corn, chopped crosswise
- 1 pound sausage links, sliced
- 4 lemon rounds, cut 1/8" thick
- 1 1/2 tsp kosher salt
- 1 1/2 pounds fresh big ol' shrimp
- 1 cup coarsely chopped arugula
- 1 TBSP finely minced Italian parsley
- 2 TBSP unsalted butter
- 6 slices of grilled country bread rubbed with garlic
Instructions
- Warm a big pot on medium-high heat until it's hot as blazes. Introduce the olive oil, leeks, and celery, cooking them up until they're just soft, around 3 minutes. Toss in the tomatoes, garlic, and thyme, continuing to cook them for another 3 minutes, until the garlic is all up in your nose with that delicious aroma. Pour in the white wine and let it reduce by half.
- Throw in the Old Bay, tomato juice, stock, potatoes, corn, sausage, lemon, 1/2 tsp of salt, and allow it to simmer for 5 minutes. While that's happening, salt the shrimp. Set that aside.
- Turn the heat down to medium-low, add the shrimp, and cover with a tight lid. Cook until the shrimp turn a pretty pink, around 5 minutes. Ain't nobody got time for translucent shrimp!
- Chuck in the arugula, parsley, butter, and remaining 1/2 tsp of salt. It's stew time, y'all! Cook that baby until the butter disappears, about 1 minute.
- Taste it, add more salt if it needs it. Pour this delightful concoction into 6 bowls and serve it up with your scrumptious country bread.
