  • Prep Time: 25 minutes
  • Marinate Time: 30 minutes (optional)

Ingredients

| | Quantity ||---------|----------|| Steak Marinade | || Olive Oil | 2 Tbsp || Garlic Cloves, minced | 3 || Chili Powder | 2 tsp || Ground Cumin | 1 tsp || Salt | 1 tsp || Pepper | 1 tsp || Skirt or Flap Steak, cut into 4-inch lengths | 1½ lbs || Lager Beer | ½ cup || Dressing | || Avocado | 1 large, ripe || Plain, whole-milk Greek yogurt | ½ cup || Fresh Cilantro, chopped | ⅓ cup || Lime Zest | 1 || Limes, juiced | 2 || Water | (optional) || Salad | || Romaine Hearts, trimmed and chopped | 12 oz || Black Beans, drained and rinsed | 1 can || Cherry Tomatoes, halved | 1 pint || Avocado | 1 large, ripe || Queso Fresco | ⅓ cup || Cilantro, chopped for garnish | || Salt | To taste |

Instructions

  1. Marinate that Steak: In a small bowl, mix oil, garlic, chili powder, cumin, salt, and pepper. Rub the paste onto the steak and toss it into a bag. Add beer, seal, and let it chill at room temperature for 30 minutes, or refrigerate for later.
  2. Make the Dressing: Blend the avocado, yogurt, cilantro, lime zest, and juice in a blender until smooth. Adjust consistency to your preference by adding water. Set aside or keep refrigerated up to 1 day.
  3. Grill the Beef: If chilled, let it rest for an hour. Heat a stovetop grill pan to medium-high, or prep a medium-high fire in a charcoal grill or gas grill burners. Spray with cooking spray. Shake off the marinade excess and grill the steak until nicely browned, about 3-4 minutes per side for medium-rare. Rest for 5 minutes, then slice strips.
  4. Prepare the Salad: Toss the romaine, beans, and tomatoes in a large bowl. Drizzle with some dressing, mix, add avocado, steak, and queso. Garnish with cilantro and season with salt. Serve!

Additional Bits

To add some extra zest, consider incorporating lime slices, red onions, or jalapeño peppers. For the vegan enthusiasts, substitute the Greek yogurt with a plant-based alternative such as silken tofu. Enjoy your cooking adventure!
