Full Moon Ale-Infused Cheese Dipped in Whiskey-Flavored Beer
Laissez-Faire Beer Cheese Dip
Hey there, folks! This badass Beer Cheese Dip recipe I concocted is a guilt-free blend of two different recipes I nicked from a Derby Day classic (given I'm a proud Louisvillian, home of the Kentucky Derby) and one of my favorite back-alley diners. So buckle up!

Timeframe: 15 minutes (give or take)
Ingredients (10):
- 12 oz. flat Blue Moon, that leftover swill from last night's Kegger
- 16 oz. grated smoked gouda, because who doesn't love a smoky kick?
- 1/4 medium onion, minced, to give it that undeniable tongue-wagging flavor
- 1/4 tsp. Tabasco or hot sauce, 'cause we ain't afraid of a lil' spice
- 1/4 tsp. Bourbon Barrel Aged Worcestershire (or regular Worcestershire), 'cause why the hell not?
- 1/4 tsp. course ground black pepper, to give it some bite
- 1/8 tsp. salt, 'cause you can never have enough salt
- Pinch of cayenne, to make your friends sweat
- 1 tsp. dry mustard, a staple in any unconventional cheese dip
- Little splash of Kentucky Bourbon, 'cause why not bring the Derby into your living room?
Instructions:
- Pour that leftover flat Blue Moon into a glass and let it sit until it loses its fizzy bitchness. Thisprocess takes anywhere from 30 minutes to an hour, but do what the hell you want, it ain't a race.
- Combine all ingredients except shinetastic Blue Moon in a food processor. Pulse it a couple times until it's slightly blended. Then turn the engine on and begin to slowly pour that beer through the chute. You'll end up with a soft mixture that'll soon harden once it hits the fridge.
- You can make this baby up to a couple days ahead. It tastes better when the flavors have had a chance to get to know each other. Serve this dip suave in a ceramic crock or ramekin, with pretzel rods, crackers, celery sticks, carrot sticks, and radishes for dipping.
