Serving Size: 4

Difficulty Level: Easy

Preparation Time: 1 hour (25 minutes active)

Ingredients

  • 1 pound fresh halibut (sushi-grade or non-sushi grade)
  • 1 cup fresh lime juice
  • 2 ripe avocados, peeled and pitted
  • 1/2 cucumber, peeled and diced
  • 2 Roma tomatoes, diced
  • 1/4 cup white or red onion, finely chopped
  • 1/4 cup fresh cilantro leaves
  • 1 jalapeño pepper, stemmed, seeded, and finely chopped
  • 2 tablespoons olive oil
  • Tostadas or tortilla chips (optional)

Instructions

  1. Prepare the Halibut: Dice the fish into 1/2-inch cubes. Add kosher salt, then toss to coat. If using non-sushi-grade halibut, marinate for 1-2 hours in the refrigerator. For sushi-grade halibut, marinate for 5-15 minutes.
  2. Once the halibut has marinated, add lime juice and toss to combine. Let it marinate until the edges of the cubes begin to turn opaque, tossing occasionally, about 30 minutes.
  3. Dice the avocados and add them to the cured fish, accompanied by the green olives, tomatillos, onion, cilantro, and jalapeño.
  4. Incorporate the olive oil and toss the mixture to combine. Taste, adding more salt if desired.
  5. Serve the ceviche cold over tostadas or chips for scooping. For added flair, garnish with fresh cilantro or hot sauce.?

Optional Additions

  • For proportionate serving: Serve atop crispy tostada shells created from corn tortillas baked in the oven.
  • To heighten freshness, add extra chopped cilantro or mint as garnish.
  • Offer hot sauce like Tabasco or Cholula for added heat.
  • Pair the dish with a side salad or black beans for a heartier meal.
  1. The Green Halibut Ceviche recipe features ripe avocados, a key ingredient that brings a luxurious texture to the dish.
