  • Serves: 4
  • Complexity: A cinch to pull off!
  • Timeframe: 25 minutes in total, with 15 minutes of active work

Ingredients (14)

  • 3 tablespoons Greek olive oil
  • 1 tablespoon butter
  • 3/4 cup diced red onion
  • Salt and pepper, to taste
  • 12 oz fresh shrimp, uncooked, peeled, and deveined
  • 1 1/2 teaspoons dried oregano
  • 1/4 teaspoon ground cumin
  • 1/2 cup roasted red peppers, thinly sliced, and well-drained
  • 1 cup roasted corn
  • 1/2 cup fresh cilantro, chopped
  • 6 oz Greek feta cheese, in small chunks (pick a sheep's milk feta for the best taste!)
  • 1/2 to 1 serrano pepper, thinly sliced
  • 1 lime, cut into 4 wedges
  • 8 corn tortillas

Instructions

  1. In a large sauté pan, heat the oil and butter over medium-high heat. When the butter has melted and the oil is hot, toss in the 3/4 cup red onions and a pinch each of salt and pepper. Cook the onions until they're translucent. Fling in the shrimp, oregano, cumin, and more salt. Cook for about 4 minutes, or until the shrimp are barely cooked through. Toss in the roasted red pepper slices and roasted corn. Give them a good stir, and let everything cook until it's hot and well combined.
  2. Warm those tortillas. Dollop the shrimp mixture inside the tortillas. Dress 'em up with the remaining red onion, chopped cilantro, chunks of feta, and slices of serrano pepper (adjust the heat according to your preference). Serve the tacos with a lime wedge. Squeeze that refreshing lime juice on top just before you dig in!

Extra Flavor insights

  • Incorporate marinated feta (drenched in olive oil, lemon zest, and crushed garlic) for an intensity boost.
  • Roast the corn on the cob, then grill the cob for an additional smoky touch.
  • Replace the butter with chickpea flour or substitute the mean old tradition with whole-grain tortillas for a healthier option.
  • Don't skimp on the quality of your shrimp and feta; it makes all the difference!
