Instructions:

  1. Combine the oils and set them aside. Soften the dried mushrooms by boiling 1/2 cup water in a small pan, adding the mushrooms, and letting them steep for 10 minutes. Strain the mushrooms, and reserve the water.
  2. Mix the egg, yolk, mustard, lemon juice, salt, and pepper in a food processor. Chop the rehydrated mushrooms and add them to the mixture, then puree until smooth. Slowly pour the oil into the food processor, creating an emulsion. Add 2 tablespoons of the lukewarm mushroom water from the straining process and continue processing until well combined.
  3. Use the Porcini Mushroom Mayo immediately or store it in the refrigerator, covered, for up to a week.

Note: This recipe contains raw eggs. Those with health concerns, the elderly, or pregnant individuals should avoid consuming raw eggs, which, in rare instances, may carry salmonella risks.
