Barbequed Salmon Patty Sandwiches

Ingredients (9)

  • 2 large eggs
  • 1 medium shallot, finely chopped
  • 3 tablespoons coarsely chopped fresh Italian parsley leaves
  • 2 teaspoons kosher salt
  • 1/2 teaspoon freshly ground black pepper
  • 1/4 teaspoon celery seeds
  • 2 pounds skinless salmon fillets, pin bones removed and cut into 1-inch pieces
  • 1/4 cup panko breadcrumbs
  • Vegetable oil, for coating the grill

Method

  1. In a food processor, pulse the eggs, shallot, parsley, salt, pepper, and celery seeds until just combined. Add approximately a third of the salmon and pulse five times or until most of the large pieces are slightly chopped. Add another third of the salmon, pulse again, and add the last third, pulsing until there's an equal amount of small, medium, and large chunks. Be careful not to overprocess, or the burgers may wind up tough and dry.
  2. Transfer the mixture to a large bowl, then mix in the panko until well combined. Divide into 8 (3-inch) patties, each about 1/2-inch thick (approximately 1/3 to 1/2 cup each).
  3. Preheat your grill to medium-high heat (around 375°F to 425°F). Lightly oil the grate with some vegetable oil using a paper towel.
  4. Place the salmon patties on the grill, close the lid, and cook, undisturbed, until grill marks appear on the bottom, about 5 minutes. Flip the burgers with a clean spatula, close the lid, and cook for another 4 minutes until just done.
  5. Serve these juicy burgers garnished with Mango Salsa, Soy Remoulade, Roasted Garlic Aioli, or Jalapeno Tartar Sauce. Get creative with other toppings like Mint Basil Dressing, Chimichurri Sauce, Pineapple Salsa, Arugula or Watercress, Tahini Sauce with Lemon and Garlic, Caramelized Onions, Sour Cream with Pico de Gallo, or Fresh Dill Pickles.

  • Don't press down on the patties while grilling. Allow them to cook undisturbed until grill marks form.
  • To ensure even cooking, use a spatula to flip the burgers at the appropriate time.
  • Remember that salmon continues to cook after it's removed from the heat, so be mindful not to overcook it. The internal temperature should read 145°F.
  • If you're using a gas grill, you can create grill marks by rotating the patties every 90 degrees after about 3 minutes.
